Second Helping: Green Eggs and Ham

A few months ago, one reader posted on Facebook his attempt to replicate for his boys the Green Eggs and Ham, inspired by a classic tale by Dr. Seuss. We corresponded briefly about the variations and I promised I would post mine. This version is a green enhancement of my oven-poached eggs. Soren, my more cautious eater, ventured to sample the result and declared he "tried it but didn't like it but will eat some."

Green Eggs and Ham

some butter to grease the ramekins
4 eggs
pinch of salt
4 slices ham
1/2 cup frozen spinach
1 teaspoon olive oil
4 tablespoons half-and-half cream

Preheat oven to 400 degrees. Grease the bottom of the ramekins with butter and put them on a baking pan. Crack one egg in each ramekin and sprinkle in some salt. Place the ham slices on top of a piece of foil and onto the pan. Bake for 8 to 10 minutes or until the eggs start to set. You will see a thin layer of white forming.

While the eggs are baking, puree the spinach with the olive oil, cream, and salt until well blended. Remove pan from oven and spread the spinach mixture thinly over the eggs and ham. Bake for another 6 to 8 minutes. Enjoy with some toast and jam.
