Second Helping: Baked Lunar New Year Sweet Rice Cake

A favorite Lunar New Year tradition for our family is eating sweet rice cake which comes in many textures and flavors to suit different tastes. Growing up, I preferred the basic sugar rice cake steamed then dipped in egg batter and pan-fried. Warm, gooey, delicately sweet and slightly salty, it was just about the only dessert I would save room for in the midst of abundant feasting.

Lunar New Year festivities last for two weeks. The dates vary each year as they're based on the lunisolar calendar rather than the Gregorian calendar. This year, my firstborn's birthday occurs within that two-week period and the happy coincidence inspired me to bake a birthday rice cake. This version of the cake retains the same textures on the inside and outside as traditional rice cake but the crustiness of the buttery outer layer is achieved without the need for egg batter and pan-frying. In short, it saves time and some calories.

Baked Lunar New Year Rice Cake

Glutinous rice flour is readily available in Chinese or Asian markets.

Decorating tip: Try wrapping fruit roll-ups around wooden skewers and top with dried hibiscus flowers to create flower lanterns. I put a Disney Mulan doll as a topper to complete the effect, to my daughter's delight.

some butter, to grease the baking pan
2 eggs
1 1/2 cups brown sugar
4 cups glutinous rice flour
1 1/2 cups low-fat milk
1 teaspoon vanilla

Preheat oven to 350 degrees. Generously grease the bottom and sides of 9- or 8-inch round pan. In a mixer, beat eggs, then add sugar and beat until blended. Add the vanilla. Alternately stir in flour and milk. Blend on low until well-mixed. Consistency will be more liquid-y on account of the rice flour. Pour the batter into the pan and bake for 40 minutes. Brush some butter on top of the cake. Bake for another 5 to 10 minutes. Cake is done when toothpick inserted comes out clean. Serve warm. To reheat: put in 350 degrees oven and bake for 10 minutes.

Tips & Gadgets: Raising Brave Eaters

My adventurous 5 years old told me why he is not pleased with foods he never tried before on his plate: "I just don't know the taste and sometimes they don't look good",  he said. In front of him, parsnip and stir-fried asparagus were the challenge.
So I found a way to convince him to explore and taste the unknown territory of his plate.
I remembered that in old stories of pirates - currently his favorite characters- they had to eat whatever while on high seas, specially when during a treasure hunt.
To add spice to the story I mentioned that some pirates probably had to eat ANY kind of food if captured by enemies, including not so attractive animals and plants. 
So, he tried it, and actually liked the asparagus but was not pleased by the texture of parsnips. "You remember that I don't like cooked carrots? "- he asked.
"Those are just like them", he explained.
Since I found a good story to tell as a good incentive, I found many other ways  to inspire them to have courage to try the never-tasted-before foods:

_ Name the Food  - They love when the new recipe has a different name, mainly associated with a color or theme. Something like our Ahoy Pink Fish with Tiny Pearls, Rainbow Burritos or the wonderful goodies Darienne prepared for Halloween.

_ Explorers Tales - So I tell stories of archeologists like the ones of their Playmobil set, that have to eat the native's foods, not always something palatable for our taste buds. They go crazy when I tell  Indiana Jone's story about snakes and monkey brains.

_ Go Brave or Go Hungry - I also tell my older kid that if he wants to belong to a Peace mission, be a Medical Doctor or to be in the  Army  he has to be able to try anything.  We have some examples in the family: reporters, soldiers and hospital interns had to eat whatever was available while on duty. Otherwise, I told him, the option is ...to go hungry.

_ Picture Books -  Many books related to food were a success when introducing new foods or to facilitate feeding time. Some I read  are  Bee Bim Bop, Green Eggs and Ham, The Very Hungry Caterpillar, one of the versions of the folk tale Stone Soup just to name a few.

_ Supermarket and Fresh Market Expeditions - Sea urchins, live cat fish, lobsters and other sea creatures are the biggest attraction when we visit specialty markets and supermarket fish sections. The boys are totally in awe when they found out that those are edible and also a delicacy for some people. Also, Farmer's Market can be a good place for them to have fun and get acquainted with the seasonal contents of  their plate.

Playdate Special: Chicken Parmesan & Zucchini Pasta


Few dishes in my repertoire have been subject to as much experimentation as chicken parmesan. The dish is my husband's favorite, and I made it a mission early in our life together to come up with a version that would make him very happy without shortening his life span. And if I sound like I stepped straight out of a 1950s kitchen in a starched apron, well, I count chicken parm among my favorites as well.

I experimented with fresh bread crumbs, nonstick pans, oven-baking instead of pan-frying. We ate a lot of subpar chicken parm before hitting on this version, which slips in a few healthy tweaks but places a premium on taste. I swap out eggs in favor of egg whites (or Egg Beaters), use white whole wheat flour, and add a spoonful of flaxseed meal that goes unnoticed. In my mind, these adjustments more than make up for the indulgence of a bit of fresh mozzarella draped on top.

For a midday meal, we paired it with zucchini pasta from the New York Times. It's a fun and tasty take on zucchini that can be prepared in a snap.

We put the kids to work making dessert: Smitten Kitchen's monkey bread with cream cheese glaze. My boys revved up the mixer early in the morning so the dough could rise before our playdate. Their friends helped make quick work of coating balls of dough in butter and then cinnamon sugar. The hard part was waiting for it to bake -- my 3-year-old spent the better part of the half-hour sitting expectantly at the table repeating: "Did the timer go off yet?" If you haven't tried it, monkey bread is a great project with kids. It tastes like cinnamon rolls -- especially with the cream cheese glaze -- and it's great fun pulling off hunks of gooey, caramel-coated bread.

Chicken Parmesan

I usually plan for half a chicken breast, maybe a little more, per adult. I prefer a cast-iron pan to a non-stick skillet; use less oil if you go with non-stick, but make sure there's enough to get a nice, golden crust.

4 boneless, skinless chicken breasts
1/2 cup white whole wheat flour or all-purpose flour
salt
pepper
3 egg whites or two whole eggs
1 cup bread crumbs
1/3 cup grated Parmesan
3/4 teaspoon dried basil or oregano
1/4 teaspoon garlic powder
1 teaspoon flaxseed meal (optional)
 olive oil
2 cups tomato sauce
4 oz. fresh mozzarella cheese

Trim fat from chicken breasts. Lay chicken on plastic wrap, shiny and smooth side up, and put another piece of plastic wrap on top. Pound gently with mallet or rolling pin to flatten chicken to about 1/4 inch thick. Cut each flattened piece in half.
Combine flour, salt, and pepper in a shallow bowl. In a second bowl, beat egg whites gently with a fork. In a third bowl, combine bread crumbs, Parmesan, herbs, garlic powder, and flaxseed meal, if using.
Dip each piece of chicken in flour to coat, then egg white, and then bread crumb mixture. Set aside on a plate while you prepare the remaining pieces.
Heat a skillet over medium heat. When hot, pour in a spoonful or so of olive oil. When hot, carefully set chicken in skillet. Don't overcrowd the pan; you'll probably need to cook in two or more batches. Cook chicken 3 to 4 minutes, until crispy and golden. Using tongs, flip chicken over and cook another 3 to 4 minutes until no longer pink inside. Adjust the heat if breadcrumb coating isn't crisping (not hot enough) or is burning (too hot).
Spread one cup of tomato sauce in a baking dish large enough to hold the chicken. Place chicken pieces on top, then spread the second cup of sauce on top. Scatter slices of mozzarella cheese over everything, then place under broiler until cheese is melted.

Zucchini Pasta

Adapted from Martha Rose Shulman. You could top this with tomato sauce, but I prefer it plain.

3 zucchini
1 tablespoon extra virgin olive oil
kosher salt
freshly ground pepper
Parmesan cheese

Use a vegetable peeler to slice the zucchini into long, thin ribbons. Stop when you get to the seeds and throw out the core.
Heat a half-tablespoon of oil in a large skillet over medium to medium-high heat. Add the zucchini, sprinkle with a pinch of salt, and cook, stirring gently, for about three minutes until the zucchini softens and becomes translucent. Add salt and pepper to taste and transfer to serving bowl. Sprinkle with parmesan cheese.

Second Helping: Spaghettini with Can Can Salmon

We had just returned home from a road trip to L.A. to celebrate my firstborn's upcoming fifth birthday and there wasn't much grocery except some frozen salmon in the freezer and some dry pasta, jarred sauces, and canned vegetables in the pantry. And so I boiled some pasta, pan-fried the fish, opened two cans of vegetables, and poured in a jar of Alfredo sauce.

It was an instant hit with the husband and two kids (well, my more cautious eater skipped the artichokes). My husband remarked that "there's something indescribable but tasty in how the flavors come together." The kids giggled over my explanation of what ingredients I used: "a can of this and a can of that." Hence, the name of this dish. Tender salmon tossed together with olives, artichoke hearts, spaghettini, and a creamy, cheesy sauce result in a surprisingly delicious pasta.

Spaghettini with Can Can Salmon

Either fresh or frozen salmon works. I like buying the frozen, boneless and skinless, which makes storage and prepping a cinch.

2 tablespoons olive oil
1 pound salmon
a dash of salt and garlic powder
1/2 pound spaghettini (or capellini), cooked and drained
1 (14-oz.) can artichoke hearts, roughly chopped
1 (6-oz.) can pitted jumbo black olives, roughly chopped
1 (16.9-oz.) jar Trader Giotto's Alfredo sauce
freshly ground black pepper, to taste (optional)

Heat two tablespoons of oil in pan over medium heat. Gently place salmon fillets in pan and sprinkled a dash of salt and garlic powder on the top side. Turn up heat to medium high and cook for 4 minutes and flip once. Sprinkle an additional dash of salt and garlic powder over the cooked side. Cook fish for another 4 minutes or until the flesh is nearly opaque.
Meanwhile, cook pasta according to directions.
Toss the vegetables in with the salmon and pour in the sauce. Reduce heat to medium low and let simmer for 10 minutes or until heated through. Season with pepper to taste.
Ladle mixture over pasta and serve with a side of vegetables, e.g. garlicky spinach.

Playdate Special: Crepes for Valentine's

What about sharing your passion for food with your loved ones this weekend? That was the inspiration for this week playdate, a rehearsal for Valentine's Sunday brunch.

The intention of spreading the best feelings was in my menu, even though my mostly lovely kids were far from being adorable. Tantrums and arguments about sharing toys, loud and happy voices, and running around were the special of the day. I tried hard to concentrate and put together my project, a simple recipe of savory crepe-pancakes with a gentle filling inspired by Hawaiian pizzas, and the whole mission was looking like a challenge. But against all odds, the crepes ended up being delicious.

For dessert, white chocolate fondue,  strawberries and sugared hibiscus flowers were highly appreciated by older kids. I was also planning on preparing a cranberry-flavored bubbly to pair up with the meal for the moms, but distractions were so many that we ended up just drinking cranberry green tea. On Sunday I will do it all over again, and hopefully the spirit of Valentine will turn everything very mellow.

Crepe Sunset

I used precooked baby beets, which can be found at Trader Joe's. They didn't overshadow the flavor and added a soft pink color to the crepe. The pineapple can be from a can (in pineapple juice) or fresh.

Crepe batter
2 small cooked beetroots
2 cups milk
1 1/2 cups flour
2 eggs
2 tablespoon canola oil
2 tablespoons Parmesan cheese
Salt to taste

Filling
2 cups cooked chicken breast, shredded
4 slices smoked Gouda cheese, cut in half
4 cups yellow cheese, grated
8 tablespoons pineapple cubes

Using a blender, mix beetroots and milk until smooth. With a whisker, gradually integrate eggs, oil, flour, cheese, and salt into the mix. Make sure that all ingredients are well combined. Set aside.

Heat a medium shallow skillet over a medium flame and coat lightly with oil. When hot, pour in 1/4 cup of batter, tilting the pan to coat the whole bottom. Wait until the edges of the crepe begin to detach from the edge of the pan. Loosen the edges with the help of a spatula, then flip the pancake.

When it starts to show small bubbles, add 1/2 cup shredded cheese, 1/2 slice of gouda, 1 tablespoon of pineapple, and 1/4 cup shredded chicken. Close the crepe, roll it, and transfer to a plate.

If you want to serve all at once, set the cooked crepes in a ovenproof dish in a 200 F heated oven, cover them with cheese and pineapple pieces, and broil at low for 5 minutes before serving.

Valentine Special: Sharing the Love

I've been enjoying a virtual sugar high from all the Valentine treats floating around online, and wanted to share a few of my favorites.

I had to make these brilliant Secret Message Decoder Cookies, posted at FamilyFun. The idea is simple: Cut out the center of a sugar cookie, fill with crushed red candy, and bake. Write your message on paper with blue ink, scribble over it with red, pink, and orange, and magic! You can read the message through the candy "window."

Two tips: Use Jolly Rancher-type candies, and don't overload your cookies. Rather than sort out the red candies from a mixed bag of Jolly Ranchers, I bought those candies wrapped like strawberries. Too gummy. Don't use them. I filled the cookies to the brim, but the candy was a bit thick -- the secret messages were easier to read where the candy was a little thinner. (The ones at the top? Too thick, too difficult to decipher.)

I'm going to make a variation of layered Jell-O, beautifully demonstrated by the Food Librarian, for my son's kindergarten party this week. The Red Velvet Cake Balls from Bakerella look perfect for a playdate or Valentine goody bag. The Giver's Log made me swoon with her use of wafer paper -- I love the idea of kids decorating a cake with their own drawings! I have to get my hands on some of that stuff And finally, bread bakers could have some fun with Gourmet Mom on the Go's Tickled Pink Bread.

Playdate Special: Rainbow Burritos

One of our favorite family dine-out options is Chipotle. The sleek interior and fun ambience, together with efficient service, make it a pleasant dining experience with young children. Naturally the savory meats and fresh sides are the star attractions. While my husband and I love the barbacoa, our kids opt for the carnitas, the mildest meat on the menu. Until their taste buds can tolerate a spicier meant, I figure I could create some Mexican-inspired recipes to enjoy at home.

My first experiment was the Crockpot Carnitas. This rainbow burritos recipe is the second - an instant hit with the kids and moms at the weekly playdate lunch. This simple dish gives kids the opportunity to assemble and customize their own burritos. Offering the various colorful sides such as diced red tomatoes, shredded green lettuce, and black beans also helps to encourage them to eat the "rainbow," a concept enthusiastically embraced by the kids, especially one newly-minted three-year-old who was presently enthralled by anything rainbow-related.

Rainbow Burritos


The spice mix totals about 6 tablespoons which I reserve half for later use. Two pounds of chicken yields one meal, plus enough for a salad or quesadillas the next day.


For the spice mix:
2 teaspoons chili powder
2 teaspoons ground cumin
2 teaspoons garlic powder
1 tablespoon brown sugar
1 teaspoon oregano
2 teaspoon coarse salt
1 tablespoon cooking oil
2 pounds chicken breasts
1 8-ounces can tomato sauce

The sides portions can be adjusted according to preference:
2 cups diced tomatoes
1 cup diced onions
2 cups shredded Mexican cheese
2 cups low-fat yogurt
1 cup each, mild and spicy salsa
3 cups shredded lettuce
1 can black beans, rinsed and drained
1 package organic flour tortillas



Heat oil in pan over medium heat and spoon half of the spice mix (reserve the other half for later use) and cook for a minute. Put chicken breasts in pan and turn to coat all pieces. Pour in tomato sauce and bring to boil. Reduce heat to low medium and simmer for 20 minutes.

While meat is simmering, prepare the sides and put in serving bowls. When meat is no longer pink, turn off heat and remove pan from stove. Shred the chicken with forks. Spoon the meat and the sauce into a large serving bowl. Have the dining guests assemble and customize their burritos.

Tips & Gadgets: Avoiding Mealtime Battles

I'm jinxing this, but here goes: We've enjoyed whine-free meals with our 5-year-old for a couple months now. And he's eating a more varied diet than ever.

It's been nothing short of a miracle, so I'll share the secret: We told him he could have plain cottage cheese if he didn't like dinner. He was thrilled. Problem solved.

Yep, it was that easy.

I read "How Cottage Cheese Saved My Life" over at It's Not About Nutrition (via Fix Me a Snack) and immediately pitched the idea to my son: It can be your choice. If you don't like what I make for dinner, you could have some plain cottage cheese, yogurt, or tofu. No more wailing and complaining. Deal?

Yes! he exclaimed. Cottage cheese! As enthusiastically as if I'd announced Handy Manny was moving in next door.

Do read Dina Rose's full post, but I'll outline the basic approach:

  • Make the backup consistent: Use the same thing as a backup every time, no exceptions. Always have it on hand.
  • Make it nutritious: No appeasing with pointless food.
  • Make it convenient: You're not preparing a special meal -- you're dishing something out in mere minutes. Or maybe your child can help herself.
  • Don't make it too enticing: The backup should be something your child likes, but doesn't love -- think unflavored yogurt, tofu, canned beans.
The first time out, my son started to howl about his dinner plate. We reminded him about cottage cheese, and he immediately calmed down and took us up on the offer. A handful of times over the next few weeks, he eyed his plate and politely requested cottage cheese.

Even better, this kid -- who used to wail about anything that wasn't pizza or pasta sans tomato sauce -- has been trying all sorts of food. Chili, salmon, black bean burritos, roasted chicken -- even spicy dishes at a Singaporean restaurant. Tomatoes, peppers, onions have been devoured with happy exclamations that he likes them!

He hasn't asked for cottage cheese in over a month. I think he's forgotten it's there.

Second Helping: Tomato Soup

What to do when you want some soup and crave that homemade taste canned soup cannot offer but haven't the time to whip something up from scratch? Try this unbelievably easy recipe. Adding cream or milk right before serving cuts the acidity of the tomatoes and ups the yum factor. I opt for low-fat milk so that I can indulge and sprinkle in real chopped bacon.



This tasty, chunky soup goes well with bread or crackers. Pairing it with Darienne's grilled cheese sandwiches or my oven-grilled version makes it a hearty meal. It is comfort food that is a guaranteed crowd-pleaser, whether you are aiming for a humble family meal or a low-key dinner party with friends.

Tomato Soup

You can halve the recipe but I like to freeze the extra in one-pint ziplock bags for a fast lunch or after-school snack. Simply hold the milk and bacon until reheating time.

3 cans (28 ounces each) crushed tomatoes
24 ounces low-sodium chicken broth
1 tablespoon brown sugar
2 tablespoons butter
1 large bunch basil, minced, about 3 tablespoons
1.5 cups low-fat milk
1 pound cooked bacon, chopped

In a large stock pot, pour in the crushed tomatoes and chicken broth, stir, and bring to boil. Reduce heat, stir in sugar, butter, and basil, and let simmer for 20 minutes. Pour in milk and ladle into bowls. Sprinkle with chopped bacon and serve.

Playdate Special: Build a Better Grilled Cheese


Grilled cheese sandwiches are an easy kid-pleaser: crunchy, warm, gooey, and satisfying. It doesn't take much to elevate a good-enough grilled cheese to a spectacular sandwich. The trick is to play with your food.

We set out to create a better sandwich (the winner is below) with a build-your-own grilled cheese bar: several varieties of cheese, breads, spreads, and toppings. It's so much fun with kids. Encourage them to smell the different ingredients, then taste them. Talk about the textures. Let them nibble pieces of bread, scoop up shredded cheese, dip a (clean) finger in a spread. One of our boys was surprised that the "stinky" cheese -- Appenzeller Swiss -- was so tasty. The kids ended up building plain cheese sandwiches, but they enjoyed exploring the options. And next time they might try something new.

We had near consensus on a favorite combo: hearty bread -- either rye or the homemade light wheat sage bread -- with fig jam or chutney, caramelized onions, chopped sage, and Appenzeller and Monterey jack cheese. I liked mine with apples; my mother, who was visiting us, preferred a slightly spicy mango ginger chutney from Trader Joe's to the sweeter fig jam.

Some ideas for a build-your-own grilled cheese bar:
  • breads: Italian, sourdough, rye, wheat, oat
  • cheeses: cheddar, Swiss, Gruyere, Havarti, Muenster, colby, goat, mozzarella, Monterey jack, pepper jack (shredded cheese melts more readily, and is easier for sandwich-builders to taste-test)
  • spreads: jam, chutney, apple butter, hummus, tapenade, roasted red pepper spread, tomato sauce, pesto
  • toppings: sliced apples, fresh or caramelized onions, tomatoes, ham, bacon, prosciutto, chicken, chopped herbs, avocado, mushrooms, peppers, baby spinach

Better Grilled Cheese

To make caramelized onions, I like this Cooking Light preparation: Heat oil in a skillet over medium-high heat. Add thinly sliced white onion and stir frequently for about 15 minutes, then lower the heat and add a pat of butter. Cook about half an hour, or until the onions are browned and the liquid is gone. Add a bit of salt and pepper. Freeze extra in a flattened plastic bag so it's easy to break off a piece to thaw.

There are no measurements here: Use as much or as little of each ingredient to suit your taste.

light wheat bread, sliced
fig jam
caramelized onions (see note)
Appenzeller cheese, shredded
Monterey jack cheese, shredded
fresh sage, chopped
butter, at room temperature

Preheat skillet over medium heat.

Spread one side of each slice of bread with fig jam. Lay one slice on plate, jam side up, and top with a thin layer of cheese, onions, sage, and more cheese. Top with second slice of bread, jam side down. Spread butter on the top and bottom slices.

Lay sandwich in pan. Cook until golden brown; flip and cook other side. If the sandwich is browning quickly and the cheese hasn't yet melted, press the sandwich lightly with a spatula.
